Ham and Cheese Checkerboard Sandwich with Relish Mayo

"Checkerboard sandwiches are made with two kinds of bread. Make the fun checkerboard pattern by cutting the sandwich in quarters and flipping over two of the four sections. For this ham and cheese checkerboard sandwich, make the checkerboard with rye and Italian-style white bread."

Original Recipe Yield 1 sandwich
 

Ingredients

  • 1 tablespoon low fat mayonnaise
  • 1 teaspoon sweet pickle relish
  • 1 slice rye bread
  • 1 slice Italian-style white bread
  • 1 ounce thinly sliced ham
  • 1 ounce thinly sliced Swiss cheese

Directions

  1. Combine mayonnaise and pickle relish and spread on one side of each slice of bread. Top one of the spread sides with the ham and cheese and top with the second slice of bread, mayo side down. Cut into quarters and proceed as directed above.
