Directions

  1. Heat oven to 350 degrees F.
  2. Heat CRISCO® Oil in 10- or 12-inch skillet on medium heat.
  3. Add potatoes. Sprinkle with 1/2 teaspoon salt and pepper. Cook 8 minutes or until almost brown. Add ham. Cook 2 to 3 minutes more. Turn occasionally with spatula.
  4. Blend eggs with milk, Italian seasoning and remaining 1 teaspoon salt while potatoes are cooking. Place the potatoes into a 9" x 13", casserole dish sprayed with CRISCO® Non-Stick Cooking Spray. Stir the eggs into the potatoes.
  5. Bake covered at 350 degrees F for 15 minutes.
  6. Remove from oven. Sprinkle with cheese and return to the oven.
  7. Bake 15 minutes more or until cheese is melted and eggs are set. Turn oven to broil and continue to cook, about 2 minutes, or until top is nicely browned. Allow to cool 10 minutes before cutting into 8 squares. Serve topped with heated salsa.

Pretty good recipe. I took others' advice and added minced onion to the potatoes. Plus I threw in about 1/2 t. of dry thyme. These two additions gave it the "oomph" it needed in the taste department. I also added 1 t. of baking powder to help with the poof factor. The whole herd loved it and completely demolished the whole pan in the blink of an eye. The salsa addition, however, was voted out before I even made it. Definitely a keeper recipe.

Its an OK recipe but I will use some adjustment next time. 1. mash the potatoes instead of shredding and fry. 2. Blend 1/2 the cheese with the egg mixture and 1/2 sparkle on top 3. Beat the eggs more to have fluffier results.

A good use for leftover ham but a little bland despite adding a small chopped onion to the potatoes. Definitely needed the salsa.

This was good. I didn't use the salsa, but instead added some garlic flavored cream cheese. We ate this right up. Used cheddar cheese as well. Thanks for the post.

We liked this dish and would make it again - but I would definitely add some onion, sauteed with the potatoes...and the addition of garlic would be nice. You could easily add other veggies to this dish such as mushrooms, green or red pepper etc. Instead of using shredded frozed potatoes, we used cubed hash browns - worked very well. As an aside, we halved this recipe as it was only for three people - it halved very nicely.

I added hot Italian sausage, cut into bite size pieces in place of the ham to spice it up a bit more and added onion and fresh garlic to the shredded potatoes. It was a nice meal on a cold fall night.

I also thought this was very bland. My boyfriend loved it though and is in charge of eating the leftovers. I added more ham than called for and onions and tabasco, which of course was redundant with the salsa. I'm not sure what the texture of mashed potatoes and eggs would be either. What about adding a few jalapenos right in the eggs in place of the salsa? Just a thought.
