Gujarati Carrot and Peanut Salad

Ingredients

  • 2 cups grated carrots
  • 1/2 cup chopped salted peanuts
  • 3 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1 teaspoon white sugar
  • 1 green chile pepper, seeded and diced
  • 2 tablespoons finely chopped fresh cilantro

Directions

  1. In a medium serving bowl, toss together the carrots and peanuts. In a separate bowl, whisk together the lemon juice, salt, sugar, chile pepper and cilantro. Pour over the carrots and stir gently to coat. Serve immediately.
