No apple cider or juice on hand, so I chopped up a couple of apples in my food processor, stirred them around with the peices of meat, then added a little water to cover. The meat came from a smaller deer, so I had smaller peices. Because of this, I skewered the meat and wove the bacon between the peices. It turned out great. My skeptical husband said he hoped I hadn't messed up the meat, but was won over at the dinner table! He even took some over to our neighbor who is an avid hunter as soon as dinner was over. Thumbs up from him too! No gamey taste at all.
