al fresco® Teriyaki Ginger Chicken Meatballs
fresh pineapple, sliced 3 inches x 3/4 inches
Cooking spray, extra virgin olive oil
fresh peppermint leaves
YUM! I was unable to find the teriyaki ginger chicken meatballs so I used al fresco tomato & basil chicken meatballs. I heated them in the microwave as they are already cooked, then brushed with warm teriyaki sauce. When placed on the pineapple chunks, they dripped down. Served with teriyaki sauce for dipping, they were YUMMY! Both Hubby and I give these two thumbs up!! Thank you al fresco All Natural for such a yummy recipe!
Good luck finding the Al Fresco brand meatballs. I went to 6 grocery stores to try and find them. I ended up creating my own mealballs and they turned out ok, but it was more stress than I needed for a New Years party.
My pineapple wasn't fantastic, but that's what I get for trying to make this in September. Overall, it was a decent dish, but I think I'd prefer it with regular meatballs. There's definitely a bit of an aftertaste with the al fresco, to me. They do look pretty, though! :)
The al fresco chicken meatballs are cooked, so it didn't make much sense to me to heat them in a skillet with water. It's much easier to just heat them on low in the microwave to take the chill off. I left the pineapple skin on, so it gave the appetizer some stability, and topped each meatball with a dollop of hoisin. Nice presentation, SUPER easy, and the hoisin sauce really complements both the meatballs and the pineapple. I would make this again.
This was just ok, it would be better with more of a sauce than straight hoisin. Not sure I will make again.
Delicious! My local store does not carry the Teriyaki Ginger chicken meatballs, so I substituted with the Tomato Basil chicken meatballs and added my own teriyaki sauce. My husband loved it and my kids couldn't get enough! Love that the meatballs were pre-cooked, so preparation was quick and easy.
I like chicken meatballs, but just found this recipe to be very odd! It almost seems like it was just thrown together to create a recipe. It didn't say how long to cook the meatballs, and because this is all about presentation they seemed slightly undercooked in the center. The pineapple did not look very pretty with the glaze on it, almost sloppy. The mint, made no sense. I guess it was just supposed to be one piece on the whole tray as a garnish? It definitely didn't go flavor wise. Also, how would one pick this up as an appetizer. the cooked pineapple becomes so limp. The slice or cut of the pineapple wasn't exactly clear. I used rings, and I am guessing it was meant for chunks. I like the idea of pineapple and chicken sausage, but would have to come up with a recipe to make this function much better.
