First off, the roasted tomato mayo is simply smashing. I didn't add salt as Hellmanns' mayo is already terribly salty. I used roasted tomatoes I had previously made and frozen with no problem. Didn't have prosciutto so had to sub with some shaved ham slices and ended up using homemade white bread (although I was REALLY temped to use some ciabatta bread I had .... I will next time). Onions were a great addition. Really nice change from usual grilled cheese :)

Modified to have whole sun-dried tomatoes as well. Absolutely delicious!
