  1. In 4 qt saucepan, heat oil over medium-high heat. Add onion and cook 5 minutes, stirring occasionally. Add mushrooms and carrots and cook, stirring occasionally 5-7 minutes or until tender. Add garlic, salt, thyme, and pepper, and cook 1 minute, stirring.
  2. Add broth, rice, and 2 cups water and fish fillets, cover and heat to boiling over high heat. Reduce heat to medium; cook partially covered for 10 minutes. Break fish apart and serve.

This was really delicious. And unbelievably easy to make. I stayed as close to the recipe as possible. I did have to sub in mostly portabellos (about 12 oz) and a couple ounces oyster mushrooms (what I had on hand). With some fresh biscuits and a side salad, it was a very filling but not too heavy meal. My husband, not a soup fan, really enjoyed this soup! It makes 4 really big bowls or 6 to 8 small bowls to accompany a meal. Def going in my recipe box!
