Grilled Apple Curry Chicken

Directions

  1. Preheat grill or broiler.
  2. Place chutney, Juicy Juice, garlic and curry powder in food processor or blender; cover. Process until smooth. Reserve 1/3 cup.
  3. Prepare pasta according to package directions; keep warm.
  4. Grill or broil chicken, brushing frequently with remaining chutney mixture, until chicken is no longer pink in center. Slice chicken; place over pasta. Spoon reserved chutney mixture over chicken; sprinkle with parsley.

This was really good! I used a mango curry chutney in place of the apple chutney but still used apple juice and it was amazing! I recommend making a little more sauce than described for the noodles but other than that its a definite repeat.

Great recipe. Apple Chutney was difficult to find so I used Cranberry Chutney and it was absolutely fantastic. Also, I used 2 tsp of curry instead of 1 and instead of pasta I made asparagus with garlic powder and olive oil. I would highly recommend this recipe. The sauce can also be used anytime not just with this recipe, it is a good BBQ sauce replacement.

This was really good and had some kick -- I used a spicy mango chutney and a little extra curry powder. I liked the combination of fruity and spicy. Next time I think I will make it with the super skinny egg noodles....
