I used half evaporated milk in this recipe for a creamier egg texture. I cut the salt back by half and added a few seasons to the egg mixture (onion powder, garlic powder, Frank's hot sauce, fresh ground pepper) before pouring it over the croutons. We all really liked this. I served it with salsa and sour cream on top and paired it with bacon home fries and whole wheat toast.

I have made this twice now. The first time I wasn't sure about it because the croutons are very soft after they sit in the egg mixture overnight. When you cook it there are soft croutons throughout the dish. I was expecting the croutons to add kind of a crunchy crust. This is not the case. But, I love the taste and my family (especially the kids) were asking for seconds. I put it together in the morning and then put it in the oven at dinner time. It is so easy that I will make it again and again.
