Original Recipe Yield 5 cups

Ingredients

  • 2 cups fresh grapefruit juice
  • 1 cup fresh lime juice
  • 1/2 cup wine vinegar
  • 1/2 cup light soy sauce
  • 1 (5 inch) ginger root, peeled and minced
  • 1 cup coarsely chopped fresh basil leaves
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh dill

Directions

  1. In a nonreactive bowl, mix together the grapefruit juice, lime juice, wine vinegar, light soy sauce, ginger, basil, thyme, and dill. Use as marinade for fish, poultry, or meats; refrigerate while marinating.

Footnotes

  • Cook's Note
  • If using on fish, marinate for just 1 to 2 hours so vinegar does not "cook" it.
