I love this recipe! We use fresh beans and boil them until soft then follow the recipe pretty much as-is (although I will substitute plain yogurt for the sour cream depending what we have on hand.) We've made it every couple of weeks since we first tried it and it's definitely a new favorite!

I chose this recipe because my daughter requested Green Bean Casserole for Easter and I try to avoid recipes that call for processed ingredients. We thought it was ok. It was edible and no one complained about it, just not something I'd make again.

This recipe was excellent! I made it with my crock pot ham for Easter and everyone liked it alot better then the recipe I was using that called for fried onions on top!

I used a pound of fresh, steamed greenbeans instead of canned - next time I'd use a pound and a half, plus cut the beans smaller. I'd also add more onion - maybe a third of a cup instead. I'd also cut the cheese down to 1.5 or maybe 1.25 cups instead. Instead of normal Ritz crackers, I crumbled those thin ones - the Parmesan Herb flavor - worked out great. I also topped it with a few of the cheddar fried onions - definitely add that again. UPDATE: I used canned this time, still topped with fried onions, decided to keep the cheese the same. They were the most-requested "seconds" at my Thanksgiving table.

All the GK's at my house for weekend and all 3 begging for Gmas baked chuck roast, "smashed" potatoes and any green veggie. I found this recipe and not being able to tolerate the standard greenbean casserole under any conditions, decided to give this a whirl. One of the GK's asked if they could mop out the bowl with a dinner roll. All I can say is, next time, I WILL double the ingredients. This recipe said 10 servings, there were 5 of us and everyone went back for seconds. A perfect side dish I look forward to doing many times over! TY!

I like this version much better than the typical fried onion one as I can control sodium levels more, and add garlic, onion salt, herbs, etc...
