I have been making this basic recipe for 37 years, and it is always in the meal rotation. I include crushed ritz crackers, at least 1 long 'sleeve' per 2 cans of DRAINED salmon, plus onion and celery eyeballed to taste. The crackers really make it delicious.
Leave the bones! They are pure calcium! As I mix by hand I add 1-2 eggs to bind the ingredients enough to form patties.(refrigerating patties helps, but not required if in a hurry)
I fry the patties in a mix of 1:1 oil and butter, being careful
to turn patties with a spatula only once. You're just browning the outside. Place in a low oven to finish cooking and keep warm.
