I loved these! Very filling and light and fluffy! I added Greek yogurt, Goji berries, dark chocolate chips, lemon zest and lemon juice. I also added milk here and there when batter seemed too thick. The whole family loved them and they didn't have to eat a large amount. Next time I will try adding wheat whey too. Fantabulous and now my go to recipe for pancakes.

Great recipe! I didn't add quite so much salt, added about a half a tablespoon more of sugar, and a half teaspoon of vanilla. They were fantastic! I've never successfully made pancakes before now. They've always been too goopy or too thin or I burnt them. These were absolutely perfect. Thick, fluffy pancakes cooked just right! They looked very much like pancakes you see in cartoons~ The only thing I didn't like was that they're pretty heavy, so I got full really quickly! Otherwise they were fantastic~ Thank you so much, I'll definitely be using this recipe again!!

These are the best pancakes EVER!!! They are super fluffy and thick, sometimes almost an inch high. I keep the wet and dry ingredients separate until just before putting them on the hot buttery pan. Otherwise the batter will be too puffy to use, spoken from experience... I use about a 1/4 cup for each pancake. I personally like to thinly slice Granny Smith apples and fan them out on the wet side of the pancake just after pouring/scooping the batter onto the hot pan (make sure they are sinking in just a little). Flip them after you see a nice golden brown to cook the apple side. Serve them with some thinly sliced super sharp cheddar and maple syrup with a side of hot jimmy dean sausage, and you'll have a religious breakfast experience. I'd add a photo, but can never take a picture of them since I'm either cooking them or eating them. SO GOOD.

I have no idea what you people are saying about the eggs and milk being warm overnight. Talk about unnecessary hassle. Don't you ever wake up on Saturday mornings and decide what to make for breakfast on a whim? This recipe is scrumptious with cold ingredients! I use salted butter because that is all I buy- it just tastes better! I add cinnamon, 1 tsp, just because I am cinnamon obsessed. I love the taste of the white whole wheat flour I always buy, and of course I like to put some blueberries on the pancakes after putting them on the skillet. I am now embarrassed I used to buy box mixes! I thought I would have to have buttermilk on hand to make them from scratch. So grateful to have found this recipe. Ps, it also works well for waffles! Hooray!
