I love this recipe but I was concerned about the ingredient proportions so being the scientist I am I made 6 very small batches varying amount of baking soda ginger and cinnamon. Because I was looking for a recipe that tasted very close to the gingerbread that I was used to I found that doubling the ginger and cinnamon had the best result and if you would prefer more spice in your cookie it still leaves a lot of room to change the recipe to fit your personal preference. on another note depending of if you are looking for a softer (more bread like) cookie I would suggest changing the cook time to 8 min and the thickness closer to 1/4 in.

Made this last season and again this season. Last season I followed the recipe exactly with excellent results. The dough is VERY easy to work with but only made about 20, 2 1/2 inch cookies. This time I added a pinch of ground cloves and a tsp. vanilla. I also rolled the dough out a bit thicker. Still a very yummy cookie! Not very spicy nor too sweet.

I LOVE this recipe! I am a preschool teacher so time, quality, and quantity is a big deal in my busy life; my children are ruthless when it comes to judgement and they didn't have one bad thing to say about these tasty little men! I did not use Cook and Serve Pudding Mix, I used Instant Pudding Mix and it was great..The gingerbread men are delicious, easy to make, and hold their shape!! Please try this recipe - you will not regret it!

my dough is verry dry? Any hints as to how to make it not so??? dough tastes great and was really looking forward to making them... sadly dissapointed.

Please be aware: DOUBLE batch only resulted in 39- 3" cookies! I also made a single batch with instant pudding and it turned out great. These are really delicious!

OK, just not spicy enough. They are easy to roll out. Doesn't make a lot, so probably a great recipe for kids to play with and enjoy.

I made 2 batches, following the directions exactly, one with instant pudding and one with cook and serve type. Both turned out awesome, held their shape and were delicious. Easy to make and easy to roll out. I took one batch to a school choir concert. They were gone in minutes. I will definitely make these again and can see these becoming a tradition for the holidays with my family.

Very easy and not too strong gingerbread flavor, which we like. I made these just into circles and will drizzle icing on top. Next time plan to top with natural sugar before baking to add a little something.

Question: I also don't care for molasses, however I'm even less of a fan of butterscotch. Any 3rd alternatives someone could recommend would be appreciated!

My son and I made these over the weekend. They were awesome! We had fun making them and most definately will make them again. We made them on Sunday and there is done left.
