Directions

  1. Preheat oven to 350 degrees F. Combine whole wheat flour, all-purpose flour, baking powder, baking soda and kosher salt in small bowl and set aside.
  2. In large mixing bowl, beat together butter and peanut butter using electric mixer until smooth. Beat Stevia Extract In The Raw and Sugar In The Raw into the mixture until blended. Add egg and vanilla and blend. Beat flour mixture just until blended. Chill dough for 1-2 hours.
  3. Shape dough into 1-inch balls, two inches apart on ungreased cookie sheet. Flatten each cookie pressing crisscross pattern with a fork.
  4. Bake 10-12 minutes or until lightly golden. Remove from oven and cool on a wire rack.
  5. Store in a tightly covered container.

This is a wonderfull recipe, allthough I would like to add one thing. Do not follow it as it is wriiten or your oven will be on for 2 hours doing nothing

This one is on my christmas cookie list! It is hard to find really good cookie recipes with all natural ingredients. I got the peanut butter ground fresh at whole foods and I usually use sugar in the raw anyway. I had to buy the Stevia in the raw online since they don't sell it by me yet. This one is a keeper. (if you like it moister you want to get the CREAMY peanut butter)

HEAVENLY! All you need after this is a big glass of milk.

I made some modifications to this recipe: Melted the butter and added the peanut butter to the butter, then the eggs. Mixed well and then mixed with the dry ingredients. No need to chill the dough. Cooks in about 15 minutes, depending on your oven. To prepare and cook took about an hour total. The recipe contains sugar -- was hoping to use only Stevia and no sugar.
