I believe the cooking time listed is too short to soften the potatoes. My mother's German potato salad was better than this recipe but she was a 1st generation German. I don't have the recipe but recall a light cream sauce too. I went with one reviewers suggestion and added more vinegar. It was too strong for my taste even though I prefer strong flavors.

Fantastic salad. I made it today for a Memorial Day picnic and it was a WINNER. Perfect just the way it is!!!!

Not enought liquid or flavor. I think if the vinegar were trippled and the water doubled and the sugar increased, it could be good.
