My husband and I seem to eat lots of meat and wanted to switch it up. We ate this as a meal and it was pretty good- but I will plan on using it for a side dish in the future. Eggplant tasted fine for us- I think it is all about grilling it right- I probably would have grilled the tomatoes longer since we like them really soft. Thank you for the recipe :)

I made this as a side dish for a barbecue I hosted this weekend, and it was a hit! I had to email the recipe to my dad because he liked it so much. Grilling the veggies really brings out the flavor, and the dressing on them is delicious. I docked one star for the eggplant though. I grilled it but left it out of the salad, it just seemed mushy and spongy.
