Frosted Cocoa Cookies

Ingredients

  • 1 cup shortening
  • 2 cups sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 cup baking cocoa
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • FROSTING:
  • 3 cups confectioners' sugar
  • 1/3 cup baking cocoa
  • 1/3 cup butter or margarine, softened
  • 1/4 teaspoon almond extract
  • 3 tablespoons milk

Directions

  1. In a large mixing bowl, cream shortening and sugar. add eggs, one at a time, beating well after each addition. beat in vanilla. combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture.
  2. Roll into 1-1/2-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 13-16 minutes or until set. Remove to wire racks to cool.
  3. For frosting, in a mixing bowl, combine the confectioners' sugar, cocoa, butter and extract. Add enough milk to achieve spreading consistency. Frost cooled cookies.
