Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup white sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 3 ounces cream cheese, softened
  • 1/2 cup flaked coconut
  • 1/2 cup apricot preserves

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  2. Combine flour, sugar, baking powder and salt. Cut in margarine and cream cheese until mixture resembles coarse meal. Spoon in coconut and preserves, mix well. Drop dough by teaspoonful onto greased cookie sheet.
  3. Bake 15 to 18 minutes; until lightly browned. Cool before frosting.
