Four-Cheese Spinach Bake

Ingredients

  • 8 eggs, beaten
  • 4 cups small curd cottage cheese
  • 1 (15 ounce) container ricotta cheese
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 2 cups shredded Cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup finely chopped green onions

Directions

  1. In a large bowl, combine the eggs, cottage cheese, ricotta cheese, flour and salt if desired. Add the remaining ingredients; mix well. Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.
