The first time I made these, I made them exactly as written and frankly they were good, but something was a bit "off". So the second time I used 1 tablespoon apple cider vinegar (in place of the 2 tablespoons of regular vinegar since I felt this was the culprit in my original batch tasting off) and they were MUCH better. The third time I kept the above change, but also added 1 teaspoon vanilla extract and I let the batter rest for fifteen minutes before cooking the pancakes - perfection!!! Now I make it with these two simple changes and I also double the recipe. (You can keep the first few pancakes warm in your oven set at about 170 degrees on a heat-safe plate while making the rest of the batch.) I serve these with a homemade blueberry compote and they are scrumptious!!
