Flounder Florentine

Ingredients

  • 2 (10 ounce) packages frozen chopped spinach, thawed and drained
  • 1 pound fresh or frozen flounder, or sole fillets, thawed
  • 3 tablespoons chopped onion
  • 2 tablespoons butter or stick margarine
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground nutmeg
  • 1 1/2 cups fat-free milk
  • 1 tablespoon grated Parmesan cheese
  • 1/4 teaspoon paprika

Directions

  1. Sprinkle spinach in a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray. Top with fillets.
  2. In a saucepan, saute onion in butter until tender. Stir in flour, salt, pepper and nutmeg until blended. Gradually add milk. bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Pour over fillets; sprinkle with Parmesan cheese and paprika. Bake, uncovered, at 350 degrees F for 20 minutes or until fish flakes easily with a fork.
