I have made this flan several times. I omit the orange juice because I prefer a vanilla flan without a citrus flavor. However, no matter how many times I make this recipe, my caramel ends up more like candy glass than caramel. I have tried tips offered by other reviewers and have even watched YouTube videos that demonstrate how to do this, and I've used thermometers , to no avail. I am starting to think my stove is bewitched! My kids don't mind, though. They lift the "glass" off their flan and eat it like a hard candy. I'm giving this five stars because it is easy to make and it's rich, creamy, and decadent, like I expect flan to taste.
