Made this for our Meatless Monday...fantastic! I just added my touch: some frozen peas, scallions, fresh nutmeg, 2 wedges of Light Laughing Cow swiss cheese, shredded Pecorino Romano, only 1/4 tsp cayenne (hubby!); mixed lite sour cream w/1 tsp flour (so no curdling) and fresh linguine. I can't wait to make it again for Fish Friday, adding shrimp! Hubby and I both said KEEPER!!!!

AWESOME DISH!!!! For those of you who commented on the sauce being runny... yes, that is true. But we just added a tad more sour cream and a little more cheese and that fixed that problem. For those who commented on the cheese or sour cream curdling... that is the nature of parmesan cheese. Parmesan cheese is a cheese that does not get creamy, so that's that. The sour cream curdling? well that's a user error, maybe your heat wasn't up high enough, we did not find this to be a problem. I did make one small change, we added a little more cayenne, but we LOVE spicy... add less if you don't like spicy, this is a spicy dish. The flavor was perfect. We only used one bell pepper, one was plenty for us. And we like our pepper less crunchy, so we sauteed the pepper a little longer with some olive oil. I added the cheese to the pan sauce and let it get melty in the pan, it blended well and it made the sauce thicker. This is a very easy and delicious dish! We added grilled chicken hot off the grill... mouth watering and much more filling with the added chicken! I cannot wait to make this again!!! i'm ready for our leftovers ;)

Five stars for sure, as written. But of course I had to add my own twist anyway. I also added some onions while sauteing the red bell peppers and garlic, then I added diced tomatoes right at the end, just to warm them, then threw in some parsley, oregano, basil and ground black pepper to taste, then proceeded with the dish as written. I love vegetarian meals, but this would also be great if you added some grilled chicken - yum!!

I just served this for lunch for my ship's crew of 22 and it outsold my very popular "beef fajitas". I took note of the issue of this being watery, so I added 2tbsp. of flour directly into each c. of sour cream before adding. Thickens it up nicely.

Well, this sounded delicious.......but was dissapointing. I tried it twice, and both times the Greek yoghurt I used in place of sour cream curdled. I substitute this regularly with great results, however this time for this recipe it failed, horribly.

I didn't have red peppers so I made this with some jarred sun dried tomatoes and mushrooms. My husband and I really liked the flavors, but the cheap grated Parmesan cheese I used made the sauce gritty, a little too salty, and not creamy. I think if I make this again I will definitely use real Parmesan but half it and make up the rest with Mozzarella or another cheese.

I wanted to cook this because I love pasta, and was excited to go to the store to pick up ingredients that I didn't have on hand. I found this to be to spicy and it wasn't creamy. So, I will not be cooking this again.
