Festive Prune Cake

Original Recipe Yield 1 9x13 inch cake or 2-8 inch rounds
 

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1/2 cup shortening
  • 1 cup white sugar
  • 2 eggs
  • 1 cup prune juice
  • 1 cup prunes, cooked and chopped
  • 1 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.
  2. Sift the flour, baking soda, salt, ground cinnamon, nutmeg, cloves and allspice. Set aside.
  3. Cream the shortening with the white sugar. Blend in the eggs one at a time and beat well for 1 minute. Add the dry ingredients alternately with the prune juice. Stir in the prunes and nuts. Pour batter into the prepared pan.
  4. Bake at 350 degrees F (175 degrees C) for 30 minutes or until done.
