extra-virgin olive oil, divided
1 (12 ounce) jar
giardiniera, drained, or to taste
cherry tomatoes, halved
shredded mozzarella cheese
salt and black pepper to taste
This was super quick.I added a bit more juice from the giardiniera and olive oil.I seasoned it a bit with salad supreme and added red onion.I served this with grilled chicken italian sausage.This was a make ahead tasty Summer meal not full of fat as it wasn't dripping in oil.
