I made this for my mom's 52nd birthday and even the adults RAVED over this cake (we aren't big cake fans). My husband said this is the first time he's liked the cake more than the frosting! A moist and fluffy cake, I used strong coffee instead of water for a stronger chocolate flavor (you can't taste the coffee). I also sifted the dry ingredients together and used extra light olive oil instead of vegetable oil (you can't taste the oil). The batter will be extremely thin. I made the following adjustments for high altitude (between 5,000 and 7,000 feet): 1 3/4 c sugar, 1 3/4 + 3 Tbsp flour, 3/4 c + 1 Tbsp cocoa powder, 1 1/4 tsp each baking soda and powder, 1 tsp salt, 1 1/4 c milk, 1/2 c vegetable oil, 2 tsp vanilla extract, 1 c + 2 Tbsp boiling strong coffee. I followed the instructions exactly, with the exception of sifting the dry ingredients together before adding in the wet. Happy baking!
