Great recipe for enchiladas, like many, I changed a few things. First big thing is I used rotisserie chicken for my meat, as well as using some left over "hoppin johns" as a kind of bean spread inside the corn tortillas too. Used a can of enchilada sauce, 1/3 spread on the bottom of the pan which made cleanup SO SIMPLE, the other two thirds on top of the completed enchiladas, before I spread the remaining cheese mixture. For that mixture, I used healthy request cream of chicken soup, part lite sour cream, part cottage cheese, part plain greek yogurt, finished with about a cup of cheddar/jack cheese. Used the remaining cheese to sprinkle on top. Delicious!
