Almost perfect recipe produces 9 classic, soft, thick cookies. Regarding ingredients, I use butter, not margarine. I measure my flour by spooning into cup, and I use a knife to level off all measuring. I bought Publix molasses which is not labeled dark or light, but it is dark. My teens rate them a FAVE without the cloves; they still have plenty of aroma and spicey flavor.
After chilling in fridge for 1.5 hours, the dough is still manageable. It's not too hard to roll, and not so sticky that it sticks to lightly floured cutting board, no parchment needed. For a classic, soft cookie that's just a tad over 1/4" thick, recipe produces 9 cookies with cutter size 3.5" wide at the arms and 4" from head top to bottom leg. Using a convection oven, I remove at 8 minutes, then let them cool for 5-10 minutes so they stiffen up. The next day they're still nice and soft.
