I did these truffles for a Christmas party I had yesterday, i made them on the day before and dip them on the chocolate the day after, even though dipping was not easy ,they became very good at the end! I added more rum extract to the mix.
I made these for a holiday party. They not only taste great but are very visually appealing. I found the mix too soft, but froze it and tried my best. They kind of froze to the fork once the chocolate was on (I guess). So I had to dip and put onto wax paper right away. I will thin out my dipping chocolate next time. Everyone loved them.
I only made one batch of these truffles because I'm not really a fan of white chocolate. But that was a big mistake. They really do remind me of eggnog, and they're melt-in-your mouth good. I substituted dark Barbados rum for the extract and used fresh ground nutmeg instead of the powdered nutmeg. So incredibly delicious. These will be added to my list of Christmas candies to make every year.
These turned out REALLY good! Make sure you chill them. A bit of effort, but well worth it! These were hard to keep around-everyone kept sneaking them!
