I was looking for something more creamy and comforting than the traditional vinegary egg salad with sweet pickle relish. My husband's favorite way to eat this is on toasted sesame seed buns or bagels, with crisp bacon and thin slices of tomato for breakfast. It's my favorite comfort food. Once, I didn't have the dill weed, but used dried basil instead. I think you could use any fragrant tender herb here or use chopped chives or scallions instead of some of the dried onion.
