Directions

  1. Stir potatoes, onion, eggs, flour, garlic powder, salt, and black pepper together in a bowl.
  2. Heat a lightly oiled large skillet over medium heat. Drop potato mixture by large spoonfuls onto the skillet and cook until edges are dry and golden, 3 to 4 minutes. Flip and cook until browned on the other side, 3 to 4 minutes. Repeat with remaining potato mixture.

This is a great, basic potato pancake recipe! I only had Yukon gold potatoes, so I used those. I really wasn't sure of the size of potatoes to use, so I only added 1 egg and mixed it up to see the consistency before adding the second, and I ended up not needing the second, it was perfect with just the one. These cooked up nice and crisp on the outside and soft and tasty in the middle. I will def be making these again~YUM! Thanks for sharing. :)

It was good. Pretty close to my dad's. Next time I will omit the pepper.
