10 pitted prunes
1/4 cup finely chopped walnuts
2 tablespoons liquid honey
1 tablespoon lemon juice
20 chopped dried apricots
2 cups all-purpose flour, or more if needed
2 teaspoons baking powder
1/8 teaspoon salt
1/2 cup butter, softened
2 tablespoons vegetable shortening
1 7/8 cups superfine sugar
1 large egg
1 tablespoon milk
1 teaspoon vanilla extract
1 beaten egg (optional)
1/4 cup coarse sugar for sprinkling (optional)
The cookies were served at my church. They were excellent. Everyone liked the texture, taste and the apricot and prune fillings.
Made these for my daughter. Good recipe for kids to help with. A nice little cookie. Rating is only for cookie as we used chocolate chips for filling.
