  1. Warm 1 1/2 tablespoons olive oil and 1 1/2 tablespoons garlic flavored olive oil in a skillet over medium heat. Stir in onions and mushrooms; reduce heat to low, and cook until the mushrooms are soft and blackened and the onions are black around the edges. (Add additional olive oil as needed.) Turn the heat off, drizzle with 1 1/2 tablespoons olive oil, and season with salt and pepper. Sprinkle generously with Parmesan and Asiago cheeses.

Sauteed the mushrooms and onions in extra virgin olive oil with a paste made of fresh garlic and a little sea salt. Topped them with grated fresh Parmesan and skipped the Asiago. Beautiful--especially served alongside our grilled steak and "Smashed Cauliflower," also from this site.

I think I need to try this again. I added tomatoes but it still needed something else - something sweet I think. We also excluded the cheese.

Tasty and quick. I used fresh garlic instead of garlic flavored oil. Next time I would cut the total amount of olive oil in half, to make it even healthier and lighter.

Couldn't have been easier to prepare. I used fresh garlic and olive oil instead of garlic flavored oil. Also, added a tad of butter. Put on top of a salad. Used presliced portobelo mushrooms.

This recipe is great, it's also good with cut up tomatoes and spiced with crushed red pepper.

I definately used the shallots instead of onions the second time (first time was too dominant of a flavor). It was really good. Added just a splash of white wine before serving. Thanks for the post.

These go fast, so at least double, if not triple, the recipe..also, fresh garlic is important.

I used shallots instead of onion. Like others, I used fresh garlic instead of garlic olive oil, and used shredded cheddar as a poor girl's substitute for asiago. (Hey, I can take risks when I'm cooking for myself!) It was pretty good!
