Scanning the ingredients, it was obvious that I'd have to add more seasoning to appease our family's tastebuds. Easy enough, so I got down to business. Liberties I took with this recipe resulted in a perfectly done main dish: 2lbs. lean (93/7) ground beef seasoned to taste with worchestershire, sea salt, pepper, garlic & onion powders, dried chives and parsley. I sautéed a small onion with minced garlic in 1 T butter until just translucent, and added it to the ground beef. I used the called-for 1 egg, but scaled back on the milk (used 2/3 c) and breadcrumbs (3/4 c total of a mix of 1/2 c roasted garlic seasoned crumbs and 1/4 c panko). I always use the same topping for meatloaf, which I just eyeball (a combo of ketchup, prepared mustard, bbq sauce, brown sugar, garlic/onion powders, black pepper, ground mustard, and parsley.) I make extra and keep it warm in a small saucepan until serving. I baked it 50 minutes at 350 in a 9x5 glass pan and let it rest for another 10 minutes after removing it. Perfect! Served with mashed potatoes and corn, this will remain in my recipe box.
