  1. PREP: CLEAN: Wash hands. In medium bowl, combine all ingredients except water; mix well. Form chicken into 24 meatballs. CLEAN: Wash hands.
  2. COOK: Spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat. Add meatballs. Cook 5 minutes or until evenly browned, turning frequently. Reduce heat to medium. Add water. Cover; cook 7 to 10 minutes or until thoroughly cooked. (Insert instant-read meat thermometer in center of meatball. Temperature should read 170 degrees F.)
  3. SERVE: Serve in spaghetti sauce over pasta. Serve with crisp tossed salad and garlic bread, if desired.
  4. CHILL: Refrigerate leftovers immediately.
  5. RECIPE TIP: For uniform-size meatballs, pat chicken mixture into rectangle on foil-lined surface. Divide evenly into 24 pieces. Form each piece into a meatball.

I made these one time the way the recipe was given, then I re-worked in the second time around, using pork instead, adding fresh garlic, and also chopped mint (which is popular to do in Mexico). I then boiled them in chicken broth with tomato, onions, salt, basil leaves, and a mint sprig for twenty minutes. Everyone loved them better the second time but this recipe was helpful in figuring out what ingrediants to use for the most part!
