I did make a few substitutions after reading the other reviews: used 1/2 cup of melted butter and 1/2 cup of applesauce instead of the oil; 1 t pumpkin pie spice in addition to the cinnamon, as I was out of ginger and nutmeg; added 1-1/2 cups of chocolate chips. I was going to double the recipe, but I'm glad I didn't -- this makes a huge batch! One recipe yielded 12 muffins and two 7 x 3 loaf pans. I cooked the muffins for about 35 minutes and the loaves for 45. This recipe is awesome and I will use it in the future with possible add-ins of grated carrots, shredded coconut, pineapple or raisins. Amazing recipe!
