Excellent! My 4 year old just came out to see if I was baking cookies because he said "your work smells good." I have to laugh because he is a really picky eater, and no I don't think he will eat this soup. But, if he thinks it smells good...maybe someday.....
I made it in the crock pot, just dumped all the vegies in (I added some carrots) along with the ham. I eyeballed the measurements. Cooked it on high for 2 hours, and then turned it to low. After 4 hours, I did the first taste test and went WOW! -- I did add a touch of salt. I am going to add some sharp cheddar cheese before I serve, and I kind of think that throwing a piece of bacon in (crumbled of course) would have really made it grand (of course I am out of bacon). BUT seriously the first taste test was WOW so expecting an excellent dinner. Oh, and for the butter, flour, & milk mixture---whipped it up separately as the recipe states but used more Half & half than milk (I have found that using cream--heavy, light, or even half & half gives a spectacular richness) and I am adding it to the crock pot in the last hour before serving. Expecting bliss tonight for dinner, positive the better half will love it, the 4 year old will probably eat his usual fruit loops or salad with blue cheese (can I tease him at his wedding for this?).
