Oh my goodness, this is good. I did modify the first time, but I'm sure the original is awesome also. I added an equal amount of carrots (rainbow carrots give it great color, and kids find it interesting) sauteed the vegetables before adding anything potatoes or anything. We made with gluten-free flour, due to dietary restrictions, which worked fine, and I added about 1 to 1 1/4 tsp of rosemary. Some liked it with cheese, others liked it plain. I added extra pepper to mine...my picky brother conned me into sending some home with him, kids all ate and LOVED it, and husband is taking it to work. Seriously, make this, modify it, don't, whatever. You will love it. Thank you for sharing this, Ellie.
