"Dana Thomas is an avocado expert. His company imports Chilean Hass Avocados and he's surrounded by avocados all day every day. So what's his favorite breakfast? A poached egg with avocado slices on an English muffin. He tops his with salsa. You can add jalapenos, chopped onions, cheese or whatever."

  • 1 slice whole wheat bread or English muffin, toasted
  • 1 egg, poached
  • 1/4 Chilean Hass avocado, sliced

Directions

  1. Top a toasted English muffin half with a poached egg and avocado slices. If desired, add other favorite toppings such as salsa, chopped jalapenos, onions, or cheese.
