I did this a bit differently, no broth or chilies, just salt, herbs and water to cook the quinoa after washing it (i always wash it to wash off the excess starches). Sautéed the onion (a medium-large one) separate and added it halfway through cooking the quinoa. Kept some onion back for my shrimp which I sautéed with curry, cumin, turmeric, olive oil, coconut oil and a dash of salt. 8 minutes before the quinoa was cooked I added the onion with frozen shelled edamame and small frozen peas. The result was outstanding and the inspiration came from here so thanks.
