Crystal's Awesome Potato Salad

  1. Place potatoes in a large saucepan with enough water to cover, and bring to a boil over high heat. Reduce heat to medium low, cover and simmer until potatoes are tender. Drain and cool; cut into 1-inch cubes.
  2. In a large bowl, combine potatoes with onion, celery, roasted red pepper, pepperoncini and eggs.
  3. In a small bowl, mix mayonnaise, sour cream, pickle relish, Dijon and yellow mustards, garlic, dill, parsley and red pepper flakes. Pour mixture over potatoes and stir gently to combine. Season to taste with salt and pepper. Cover and chill for 2 hours before serving.

I loved this salad! the only thing that I changed was the dill pickle relish to sweet pickle relish.

I really really wanted to like this. It just wasn't for us. My husband said " this isnt your potato salad".

Substituted Gulden's spicy brown mustard for the yellow mustard and used purple onions for color - yum! Due to lactose intolerance, I used tofu sour cream and it turned out great.

Excellent recipe! I made no fundamental changes, I just never peel my potatoes, everything else stays the same. Went over extremely well at the potluck, it was the first dish to run out!

This is the best potatoe salad I have ever tasted. My whole family loved it!

Really wanted to like this one more than I did. It had very little flavor and the chunks of potato were much too large. Wound up mashing some of the potato to get a creamier consistency and doctoring it quite a bit before the flavor was right.
