This is now on the top of my "Go To" chicken dishes! WOW! It can be very hard to get chicken that is truly crispy on the outside & moist on the inside when it comes to baking. This recipe gets it just right. The cooking time & temp on this is nearly perfect. (My oven runs a little hot on every recipe, so at one hour, the chicken was actually at 180 degrees, instead of the 165 it needs to be at, so next time I will just decrease my cooking time by roughly 5 minutes & that should do the trick... even so, it was still very juicy!).
I must say that fresh Rosemary is well worth your money & a trip to the store. It flavors the potatoes & chicken so perfectly & simultaneously tastes very natural & gourmet. I realized after my trip to the store that I had left fresh Oregano off of my list & had to substitute dried. It was just fine that way, but next time I will make sure to have fresh on hand to see if there is a huge difference. I added 1/4 tsp of Cajun Seasoning to 2 of the thighs for my husband & I & those turned out KILLER!
I have a VERY picky 3yr old & he ate an entire chicken thigh to himself & asked for more!! That's all that needs to be said!
I can't wait to make this again for my in-laws. It's very quick & easy, but tastes like you spent much more time than you actually do. You can really customize this recipe to your personal tastes, but it honestly doesn't need any tweeking to make it scrumptious! Keeper!
