"This delicious and surprising twist on traditional nachos replaces ground beef with shrimp and creates an authentic note with the addition of two readily available Hispanic-style cheeses - Queso Blanco and Cotija."

grated California Queso Blanco cheese (or California Monterey Jack)
cooked shrimp, peeled, deveined and coarsely chopped
minced green onions
chipotle chile in adobo sauce, pureed and strained
chopped fresh cilantro leaves
grated lime zest
Salt and freshly ground pepper, to taste
grated California Cotija cheese
large, flat tortilla chips
fresh cilantro leaves
The only changes I made were to use a combination of Queso Fresco and five cheese Mexican blend; also, Chipotle powder instead of the canned stuff. I had to double up on the amount of topping too. These turned out really good - the perfect combination of crispy, spicy and cheesy. Thanks!
