Grilled Mojo Chicken Salad With Asparagus and Oranges

First marinated in fresh lime and orange juice, a good amount of garlic, and fresh mint, the chicken breasts are then grilled and sliced. The slices are tossed with fresh greens, asparagus, and a citrus salad dressing.

Zucchini and yellow bell peppers are grilled ahead of time and combined with shrimp, cherry tomatoes, and feta cheese. I leave the Dijon dressing on the side and toss it at the picnic, just before serving.
