Ingredients

  • 1 1/3 cups cooked white rice
  • 2 1/2 cups milk
  • 2 eggs, beaten
  • 1/2 cup raisins
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground nutmeg

Directions

  1. Preheat oven to 300 degrees F (150 degrees C).
  2. In a large bowl, stir together cooked rice, milk and eggs. Add raisins and sugar, mix thoroughly. Spread into two 8x4 inch loaf pans and sprinkle nutmeg on top.
  3. Bake for 1 hour at 300 degrees F (150 degrees C).

I tweaked this a bit-I used uncooked rice 1 cup to 4 cups of whole milk, 2 eggs and baked it...
