Directions

  1. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 20 to 25 minutes. Drain, cool, and chop potatoes into 1-inch cubes. Combine chopped potatoes and eggs in a large bowl.
  2. Mix sour cream, mayonnaise, pimento peppers, green onions, bacon, mustard, sugar, vinegar, salt, black pepper, celery seed, and garlic powder together in a bowl. Pour dressing over potatoes and eggs; toss gently to coat. Sprinkle potato salad with paprika.

Very nice potato salad with thick dressing. It's appropriately named because it is really creamy. This recipe had a lot of ingredients, but they all work well together. I was out of paprika, but I know the visual presentation would have been even nicer with a sprinkle of that. We enjoyed it!

LOVE IT! BEST potato salad i've ever had! Left out the celery seed because i didnt have it but i still love it! Thanks!

This is really good but I leave out the celery seed and use finely sliced celery because we like it. Celery seed is a good alternative for people who (think) they do not like it. I also like to add some chopped sweet gherkins to this, and sometimes if I do not have enough eggs, use less eggs.
