I made this for me and my boyfriend, he couldn't get enough of it. One of the main things I did was make a rub out of my favorite herbs and minced fresh garlic and rubbed under the top layer of skin (by peelng it back for a sec) and also on the top, then drizzles them with olive oil. Inside the body I stuffed a wedge of lemon and a clove of garlic. And also squeezed fresh lemon and lime juice down over the top of both small birds. I poured a small amount of olive oil in the bottom of the pan, a good amount of chicken broth and a little bit of white cooking wine. I kept basting the birds in the juices every so often to keep them moist. Yummy. I will definitely be making this one again!
