Confetti Frittata

Directions

  1. PREHEAT oven to 400 degrees F. Spray 10-inch oven-proof skillet with nonstick cooking spray.
  2. COMBINE egg whites, eggs and dry milk in medium bowl; mix thoroughly. Stir in cheese, mushrooms, bell pepper, green onions, salt and black pepper. Pour mixture in prepared skillet.
  3. BAKE for 30 to 35 minutes or until set in center. Cool on wire rack for 5 minutes before cutting into wedges.

This worked well for my family. I sauteed the vegetables 2 min. and used sweet onion, added spinach. Cooking spray is a MUST. I used a pie plate for baking.

This didn't turn out well for me at all. I added some garlic powder and parsley to the mix, and it was still sorely lacking in flavor. However, I also baked mine too long, so maybe that was part of the problem. I don't have luck with frittata's anyway, so I won't try this recipie again.
