Ingredients

  • 1 tablespoon vegetable oil
  • 1 tablespoon butter or margarine
  • 1 pound boneless skinless chicken breasts, cut into cubes
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped green pepper
  • 1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
  • 1 cup water
  • 3/4 cup uncooked long grain rice
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika

Directions

  1. In a large skillet, heat oil and butter. Add chicken, onion and green pepper; cook and stir until the chicken is lightly browned and vegetables are tender. Stir in the remaining ingredients. Transfer to a lightly greased 1-1/2-qt. baking dish. Cover and bake at 375 degrees F for 55-60 minutes or until the rice is tender.
